Cookie Class 3 – Linzer Cookies!

I’m sure you’ve seen these cookies inside a tin box at many holiday parties but have you ever tried making one? Well, it was my first time making them and let me tell you, I’m in love with these cookies. Not only are they so easy to make but they are fully customizable AND make great gifts for whatever occasions! I’ve seen these beautiful jam cookies everywhere -at friend’s wedding, at many luxury high tea events at hotels, at various Christmas parties, even at various gourmet supermarkets but I never thought of making them until now. Why? mostly because these cookies looked very complicated to make plus I didn’t have cookie stamps (excuses!) but I was so happy to find out I was wrong! How easy it was to make them! the best part? you can make them into whatever shapes you want and fill them with ANYTHING you like – are you a fan of peanut butter or chocolate ? – go right ahead! I love cookies I can get creative with, don’t you agree? 🙂

Shall we bake them together? C’mon don’t be lazy, it only takes less than 30 minutues plus they make great birthday gifts (instead of buying expensive gifts, why not save some money and make something from scratch for your friends/loved ones, I’m sure they will be so happy to receive them)

Making of Linzer Cookies

roll out the cookie batter into thin sheet (2-3mm)

bake till the back side of cookie is slightly golden brown

use jam as glue to sandwich the two cookies!

fill each cookie with a fruit jam of your choice!

Linzer Cookies

Prep: 15 minutes Cooking: 10 minutes Easy Makes: 12 cookies

54g Butter
27g Powdered Sugar
11g Egg Yolk
80g Cake Flour (AP flour okay but if you want softer cookies go with Cake Flour)
Your favorite fruit jam (I chose raspberry and apricot jam)
Optional: 2g of Cinnamon Powder (which in my opinion makes these cookies go from good cookies to amazing cookies)

1. Play Cachito by Lisa Ono or any of your favorite bossa nova songs.
2. Soften the butter at room temperature then mix in the powdered sugar.
3. While dancing to bossa nova, whisk in the egg yolk and mix well.
4. Now mix in the shifted cake flour with cinnamon powder, using the palm of your hand or a scrapper knead until the mixture is uniform in color then form a ball.
5. Using a roller, roll into a sheet about 2-3mm (1/10th of an inch) thick. Then using a cookie cutter, stamp out the cookies. (if you don’t have a cookie cutter, you can use a paring knife or backside of bottle cap or a small bowl, be creative MacGyver 🙂
6. Remember you will be sandwiching two cookies then put jam onto one side of the cookie with a hole. Thus, on half of the stamped cookies, using a small circle cookie cutter, cut out a whole in the center.
7. Bake them at 170C (~338F) for about 10 minutes. (good way to check if they are done – flip the cookies and if the back side of the cookies are slightly golden brown, they are done!)
8. When the cookies are cooled, using jam, glue the two sides of cookies then fill each hole with any fruit jam of your choice. (you can also sprinkle some powdered sugar or coating sugar on the cookies before putting in the jam for snow like effect)
9. Can be eaten right away or can be stored in room temperature for up to a week. These cookies make great gifts! Bon appétit! nw cookie linzer-11

Musichef Tip #1When filling the cookies with jam, I find it easier if you put the jam inside a small disposable plastic bag (like ziplock bag) with a tip cut off then pipe each one out.

Musichef Tip #2 After step 4 or 5, you can freeze this batter up to a month.

Linzer cookies make great gift (make sure you cover the center jam part with a plastic cake sheet or parchment paper before wrapping)
